Pumpkin chocolate chip muffins

Makes 24 muffins

Ingredients:2-1/2 cups Gluten Free Pantry Muffin and Scone Mix 1/2 cup softened butter or margarine2 eggs, plus 4 egg whites, lightly beaten1 teaspoon cinnamon2 cups pumpkin puree1/2 cup chocolate chips or raisinsDirections:
    Preheat oven to 350 degrees F.In a medium-sized bowl, beat the butter until fluffy.Add the egg mixture to the butter and beat to combine.Toss the muffin mix with cinnamon and add it to the butter mixture.Fold in the pumpkin and mix everything to combine. Fold in the chocolate chips or raisins.Spoon the batter 3/4 of the way to the top of regular-sized, prepared muffin tins and bake for 20 minutes.Remove from the oven and allow to cool before serving.

A good egg (salad)

A tiny bit out of the ordinary, this egg salad recipe is tasty, creamy and crunchy. The added crunch and color come from seasonal radishes, the creaminess is from the avocado that replaces much of the mayo usually found in egg salad and the lemon zest adds a bit of sunshine to this recipe. Avocado egg salad is also a great option as a Meatless Monday meal.

Whether you need to put leftover Easter eggs to good use or you're just looking for a delicious sandwich, avocado egg salad is a good option! You could also leave out the bread and pair the salad with some leafy greens and a handful of your favorite fresh vegetables.

Avocado egg salad recipe

Serves 4-6

Ingredients:6 hard-boiled eggs, chilled and peeled1-2 avocados cut into 1/2-inch pieces5 radishes, finely chopped1 green onion, finely chopped1-2 tablespoons low-fat mayonnaise1 tablespoon parsley, finely chopped2 tablespoons lemon juiceZest of half a lemon1/4 teaspoon salt, to taste1/8 teaspoon ground black pepper, to tasteDirections:
    Hard boil six eggs. Once cooled, peel them and separate the yolks from the whites. Dice the whites into small pieces.In a large bowl, combine the egg yolks, avocado and low-fat mayonnaise. Note: If you use two avocados, use one tablespoon of mayo, and if you use one avocado, go with two tablespoons of mayo) and mash everything together with a fork or potato masher until combined and smooth (some people like to leave a few chunks).Mix in the lemon juice, zest, parsley, radishes, green onion and salt and pepper to the mixture. Taste and adjust the seasoning.Gently fold in the diced egg whites and combine.Chill until ready to use. Serve on sandwich bread or on lettuce leaves with your favorite fresh veggies.

Tonight's Dinner Pizza Bagels

Turn Breakfast Into DinnerBagels are an easy breakfast treat. But add some tomato sauce and cheese and you've got a super easy dinner the whole family will love.

Bagels are one of my all time favorite breakfast foods. I don't care if they're onion, poppy seed, or plain. If it's a circular piece of bread, I'm all in. But after everyone takes a bagel or two for breakfast, I find myself left with a lot of halves that don't seem to match. Sure, I could freeze them and use them for breakfast in a day or two, but I could also turn them into a yummy dinner treat.

The best thing about this idea is that I don't need to do any extra shopping. I can go basic and just do tomato sauce and cheese or I can make my pizzas more interesting by adding some meat and veggies. It doesn't even matter if everyone likes different toppings. Since each bagel is a single serving, every member of your family can put whatever they want on top. So the next time you're craving pizza, grab that extra bagel or two you have in the freezer and make your own.

Pizza Bagel

Ingredients

4 plain bagels, sliced in half1 cup tomato sauce, divided1-1/2 cups shredded mozzarella cheese4 ounces pepperoni

Directions

    Preheat oven to 400 degrees F.Spoon 1/8 cup of tomato sauce on each half a bagel. Sprinkle cheese evenly over all the bagel halves. Place pepperoni on top of cheese.Place prepared bagels on a baking sheet. Bake in oven for 15-20 minutes or until cheese is bubbly and bagels are toasted. Serve immediately.

    Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.Add a large handful of tortilla chips on the baking sheet spreading them out. Spoon the cooked chorizo, salsa, red onions and the black beans over the chips. Sprinkle with shredded cheese and top with more tortilla chips. Repeat this until you have used all of the ingredients.Top with the reserved 1/2 cup of cheese and bake for 10-15 minutes or until the cheese is completely melted. Garnish with sour cream, green onions and fresh cilantro. Serve warm.

    Using a spoon scoop out the avocado from the skin and add it a large mixing bowl. Gently mash with a fork or a potato masher.Add in the remaining ingredients mixing very well. Cover and allow to chill for an hour to help the flavors blend.Serve with tortilla chips or as a topping to your favorite Mexican dish.
