Serves 4-6

Ingredients:6 hard-boiled eggs, chilled and peeled1-2 avocados cut into 1/2-inch pieces5 radishes, finely chopped1 green onion, finely chopped1-2 tablespoons low-fat mayonnaise1 tablespoon parsley, finely chopped2 tablespoons lemon juiceZest of half a lemon1/4 teaspoon salt, to taste1/8 teaspoon ground black pepper, to tasteDirections:
    Hard boil six eggs. Once cooled, peel them and separate the yolks from the whites. Dice the whites into small pieces.In a large bowl, combine the egg yolks, avocado and low-fat mayonnaise. Note: If you use two avocados, use one tablespoon of mayo, and if you use one avocado, go with two tablespoons of mayo) and mash everything together with a fork or potato masher until combined and smooth (some people like to leave a few chunks).Mix in the lemon juice, zest, parsley, radishes, green onion and salt and pepper to the mixture. Taste and adjust the seasoning.Gently fold in the diced egg whites and combine.Chill until ready to use. Serve on sandwich bread or on lettuce leaves with your favorite fresh veggies.

Tonight's Dinner Pizza Bagels

Bagels are one of my all time favorite breakfast foods. I don't care if they're onion, poppy seed, or plain. If it's a circular piece of bread, I'm all in. But after everyone takes a bagel or two for breakfast, I find myself left with a lot of halves that don't seem to match. Sure, I could freeze them and use them for breakfast in a day or two, but I could also turn them into a yummy dinner treat.

The best thing about this idea is that I don't need to do any extra shopping. I can go basic and just do tomato sauce and cheese or I can make my pizzas more interesting by adding some meat and veggies. It doesn't even matter if everyone likes different toppings. Since each bagel is a single serving, every member of your family can put whatever they want on top. So the next time you're craving pizza, grab that extra bagel or two you have in the freezer and make your own.

Ingredients

4 plain bagels, sliced in half1 cup tomato sauce, divided1-1/2 cups shredded mozzarella cheese4 ounces pepperoni

Directions

    Preheat oven to 400 degrees F.Spoon 1/8 cup of tomato sauce on each half a bagel. Sprinkle cheese evenly over all the bagel halves. Place pepperoni on top of cheese.Place prepared bagels on a baking sheet. Bake in oven for 15-20 minutes or until cheese is bubbly and bagels are toasted. Serve immediately.

Repeat this until you have used all of the ingredients.Top with the reserved 1/2 cup of cheese and bake for 10-15 minutes or until the cheese is completely melted.
